Highland Park is one of the true icons among Scottish whiskies. Based in Kirkwall on the Orkney Islands, it is the northernmost working distillery in Scotland. The history of Highland Park
The history of Highland Park begins in 1798 with Magnus “Mansie” Eunson – a church beadle by day and an illegal whisky distiller by night. His still was located on the exact same spot as today’s distillery. In 1826, Highland Park was officially recognised and received its distilling licence.
Over the years, the distillery changed ownership several times. Key developments followed in 1895 when James Grant (of Glenlivet) expanded production. In 1937, Highland Park became part of Highland Distillers and has been part of the Edrington Group since 1979. In 2023, Highland Park celebrated its 225th anniversary with the release of a rare 54-year-old whisky, the oldest ever released.
The production process of Highland Park whiskies
The production process at Highland Park is all about tradition and local craftsmanship. The distillery uses pure spring water from nearby Cattie Maggie’s Spring and heather peat from Hobbister Moor – unique to the Orkney Islands. Around 20% of the barley is malted on site and dried over heather peat smoke, resulting in a subtle peaty layer.
After mashing in a stainless steel mash tun, the wort is fermented in Oregon pine washbacks. Distillation takes place in two wash stills and two spirit stills, creating a soft, rich spirit.
Maturation takes place in carefully selected Oloroso sherry casks made of both European and American oak. Highland Park is known for its cask harmonisation technique: blending different ages for optimal balance. The cool Orkney climate ensures slow maturation, contributing to the whisky’s deep, complex flavour.
