The history of Yamazaki whisky
The Yamazaki distillery was founded in 1923 by Shinjiro Torii, a man with a dream: to create a truly Japanese whisky. At the time, everyone in Japan drank imported Scotch whiskies, but Torii saw his chance to bring something completely new – a whisky that would complement the subtle flavours of Japanese cuisine.
For his bold plan, Torii didn’t choose just any location, but the Yamazaki valley, where three rivers meet: the Katsura, Uji, and Kizu. This special place, often shrouded in mysterious mist, turned out to be perfect for the slow maturation of quality whisky. Equally important was the special spring water from the valley – so pure that it has been used for centuries in Japanese tea ceremonies. This clear water, referred to by connoisseurs as “rikyu no mizu” (the water of the tea master), is the secret ingredient in every bottle of Yamazaki.
The production proces
At Yamazaki, craftsmanship is key. Unlike many other distilleries, Yamazaki works with all kinds of different stills – large, small, various shapes – each with its own character. This results in a wide range of whisky profiles – from light and fruity to rich and complex.
For maturation, Yamazaki uses a clever mix of casks: American oak for those lovely vanilla tones, Spanish sherry casks for rich fruitiness, and – the real star – rare Japanese Mizunara oak. This unique wood imparts exotic spices, a hint of coconut, and a subtle incense-like note. It is this Mizunara influence that gives Yamazaki its unique “Japanese signature.”
The patience and precision with which each step of the production process is carried out illustrates what the Japanese mean by “monozukuri” – simply not stopping until it’s perfect.

Yamazaki truly became world-famous in 2015, when the renowned whisky guru Jim Murray declared the Yamazaki Single Malt Sherry Cask 2013 to be the ‘Best Whisky in the World’ in his influential Whisky Bible. That milestone, which overtook traditional Scotch and American producers, firmly placed Japanese whisky on the global map and triggered a run on anything bearing the Yamazaki name.
Since then, Yamazaki has scooped up awards, including multiple double gold medals at the San Francisco World Spirits Competition and consistently high scores at important tastings around the world. This recognition has earned it real status among collectors, with rare bottles sometimes fetching absurd prices at auctions.
