Cask Information

The Dalmore 25 Year Old – Release III undergoes a long and layered maturation process using several different types of casks to shape its character. It starts its life in American white oak ex-bourbon barrels, which give the spirit a stable foundation and gentle influence over the first part of its 25-year ageing. From there, the whisky is transferred into Palomino Fino sherry butts and first-fill bourbon casks, each adding distinct elements of dryness, oak influence, and subtle sweetness over many years.

Once those components have matured sufficiently, they are married together in bourbon barrels to harmonise the different wood influences before moving on to the final stage. The finishing period takes place in Portuguese Tawny Port pipes, which contribute additional richness and complexity to the whisky’s overall structure. This combination of ex-bourbon, sherry, and port casks—used over an extended 25-year maturation—creates a deeply layered and well-integrated whisky that stands apart from simpler single-cask or single-wood aged expressions.

Aged for a full 25 years, this whisky is created using an intricate and carefully structured cask journey designed to build depth, balance, and elegance over time. Its maturation begins in American white oak ex-bourbon casks, which provide a smooth foundation of vanilla, honey, and gentle oak. From there, the spirit is further matured in Palomino Fino sherry butts and additional first-fill bourbon casks, each contributing distinct layers of dryness, nuttiness, and subtle sweetness.

 

Once these components reach their peak, they are brought together and married in bourbon barrels to harmonize the flavors. The final and defining stage is a finishing period in Tawny Port pipes, which adds richness, depth, and a refined sweetness, elevating the whisky into a truly luxurious expression. This final maturation introduces notes of ripe stone fruits, treacle toffee, dark chocolate, and warming spice, while enhancing the whisky’s silky texture.

Nose:
On the nose, The Dalmore 25 Year Old – Release III is rich, elegant, and deeply expressive. Aromas of exotic fruits and dried stone fruits rise first, followed by marzipan, vanilla pods, and treacle toffee. Subtle notes of fig cake, polished oak, and a gentle balsamic sweetness add further depth, creating a refined and mature aromatic profile that reflects its long ageing and complex cask journey.

Palate:
The palate is full-bodied and luxurious, unfolding slowly with layered complexity. Bright notes of orange peel and candied citrus are balanced by dark chocolate truffles, liquorice, and sherry-soaked raisins. As it develops, richer tones of sweet damsons, soft spice, and gentle oak emerge, giving the whisky both structure and elegance. The mouthfeel is smooth and rounded, with the different cask influences clearly integrated.

Finish:
The finish is long, warming, and indulgent, lingering gracefully on the palate. Flavours of Demerara sugar and maple syrup blend with bitter dark chocolate and hints of spiced gingerbread. As it fades, soft oak and residual sweetness remain, leaving a refined and satisfying aftertaste that highlights the whisky’s age, balance, and craftsmanship.
