Cask Information
The Dalmore 12 Year Old begins its maturation in American white oak ex-bourbon casks, which provide a smooth foundation of vanilla, honey and gentle oak. A proportion of the whisky is subsequently transferred into rare, carefully selected casks that previously held aged Oloroso Sherry. This second maturation enriches the spirit with deeper notes of dried fruit, dark chocolate, warm spice and The Dalmore’s signature orange character, creating a layered whisky with remarkable depth for its age.

Its character is shaped by The Dalmore’s signature approach to cask curation. The whisky begins its maturation in American white oak ex-bourbon casks, developing a smooth foundation of vanilla, honey and gentle spice. A portion of the spirit is then transferred into rare and aged Oloroso Sherry casks, adding layers of dried fruit, roasted coffee and rich citrus before the components are brought together in perfect balance.
The result is an inviting Highland whisky with aromas of Seville orange, dried fruits and vanilla pod. On the palate, notes of citrus, chocolate, warm spices and subtle oak unfold into a smooth and elegant finish. Tasting Note
Nose:
Upon pouring, the whisky reveals an inviting bouquet of Seville orange, honeyed vanilla and soft caramel. As it opens, layers of dried fruit, cinnamon and gently roasted coffee emerge, enriched by the elegant sweetness of aged Oloroso Sherry casks.
Palate:
The palate is smooth and generous, led by rich notes of orange marmalade, milk chocolate and sultanas. Warm baking spices and toasted almonds provide depth, while subtle hints of vanilla and polished oak create a refined balance between sweetness, fruit and gentle spice.
Finish:
The finish is elegant and lingering, with dark chocolate, roasted coffee and candied orange gradually fading into soft oak and warming spice. It concludes with a delicate sherry sweetness, leaving behind the unmistakable Highland character of The Dalmore.
