Like previously described, its journey begins in American white oak ex-bourbon barrels, which provide a smooth base of vanilla, honey, and gentle oak. This stage sets the foundation of softness and balance that allows the whisky to handle the richness added later. The spirit is then transferred into rare, 30-year-old Matusalem Oloroso sherry casks from González Byass, an important detail because these casks, used across Dalmore’s prestigious range, are older and richer than the younger sherry casks used for many other Dalmore expressions. Their deep seasoning infuses the whisky with intense layers of dark chocolate, citrus, roasted nuts, and warm spices, aligning perfectly with the flavor notes mentioned earlier.
