History and development

The origins of Irish whiskey date back to the Middle Ages when Irish monks introduced the distillation technique they had learned on their travels through Europe. During the 18th and 19th centuries, the Irish whiskey industry flourished, with hundreds of distilleries spread across the country. At the time, Irish whiskey was even more popular than Scotch whisky and was exported worldwide.

However, due to economic decline, the Irish War of Independence, and Prohibition in the United States, production fell sharply, and many distilleries closed their doors. Fortunately, the industry has recovered over the past few decades, and today, Irish whiskey is experiencing a resurgence with numerous artisanal and innovative distilleries continuing the rich tradition.

What makes Irish whiskey so special? Unlike Scotch whisky, Irish whiskey is usually triple-distilled, resulting in a softer and smoother drink. In addition, Irish whiskey is usually made without peat. This lacks the smoky notes found in many Scotch whiskies. This creates an accessible and refined taste experience. Another characteristic of Irish whiskey is that it has a minimum maturation of three years in oak casks. Finally, Irish whiskey has different styles, such as single malt, grain and pot still whiskey, which are often combined in blends for a unique taste.
